If I dont go to class for a holiday that I celebrate, can I get penalized for that- if attending class is part of the grade?
Religious holidays? If I take off for a religous holiday-can they count that as an official absence?? Can it affect my grade?

If they do count that as a day off you need to go to the head of the department and complain. Just because on christmas we dont have school doesnt mean that everyone celebrates this and that there are no other religions in the student body.

You should talk to the professor about it beforehand because I am not sure that schools have official policies about this. Maybe if you agree to make up the work than it will be fine. But I think the best thing you can do is just be sincere about the fact that you dont want to be in school on a holiday. I do not think this should effect your grade in any way.

If you don't show up often and this is just another excuse I am not sure the professor is going to take the holiday into account. If you are usually a good student and discuss it with the prof beforehand they have to give confirmation. Don't you mostly have big lecture halls anyway?
